Β Gatte Ki Sabzi is a traditional and popular dish from Rajasthan. It is made using besan (gram flour) dumplings called gatte, which are cooked in a flavorful yogurt-based gravy with spices.

Β For Gatte (dumplings)
- 1 cup besan (gram flour)
- 2 tbsp yogurt
- 1 tsp red chili powder
- Β½ tsp turmeric
- Β½ tsp carom seeds (ajwain)
- Salt to taste
- 1 tbsp oil
- Water (for kneading)
For Gravy
- 1 cup yogurt
- 1 onion (finely chopped)
- 1 tomato (chopped)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- Β½ tsp turmeric
- 1 tsp red chili powder
- 2 tbsp oil or ghee
- Salt to taste

- Prepare the Gatte:
Mix besan, yogurt, spices, salt, and oil. Add a little water and knead into a firm dough. - Shape and Boil:
Roll the dough into long cylindrical shapes and boil them in water for about 8β10 minutes. Remove and cut into small pieces. - Make the Gravy:
Heat oil in a pan, add cumin seeds, then sautΓ© onion and tomato until soft. - Add Spices:
Add turmeric, red chili powder, and coriander powder. Mix well. - Add Yogurt and Gatte:
Add whisked yogurt and the gatte pieces. Cook for 5β7 minutes until the gravy thickens.

Serve hot Gatte Ki Sabzi with roti, paratha, or steamed rice.
