π₯ Rabri β Rich and Creamy Indian Dessert
Rabri is a classic Indian dessert made by slowly boiling full-fat milk until it thickens and forms layers of malai (cream). Flavored with saffron and cardamom, and garnished with almonds and pistachios, Rabri is both aromatic and indulgent.
π Ingredients
- 1 liter full-fat milk
- ΒΌ cup sugar (adjust to taste)
- Β½ tsp cardamom powder
- 6β8 saffron strands
- 10β12 chopped almonds and pistachios
- 1 tsp rose water (optional)

- Boil Milk:
- Pour milk into a heavy-bottomed pan. Bring it to a gentle boil on medium heat.
- Thicken Milk:
- Reduce heat and simmer, stirring occasionally to prevent sticking.
- Scrape the thickened milk layers (malai) that form on top and mix gently back into the milk.
- Continue until the milk reduces to half its original volume.
- Add Sugar & Flavors:
- Add sugar, cardamom powder, saffron strands, and rose water (if using).
- Stir gently and simmer for 5 more minutes.
- Garnish & Serve:
- Top with chopped almonds and pistachios.
- Serve warm or chilled.

- Stir continuously while thickening to prevent burning.
- Can be paired with malpua, puri, or eaten alone.
