Gatte Ki Sabzi – Traditional Rajasthani Gram Flour Curry Recipe

🍛 Gatte Ki Sabzi  Gatte Ki Sabzi is a traditional and popular dish from Rajasthan. It is made using besan (gram flour) dumplings called gatte, which are cooked in a flavorful yogurt-based gravy with spices. This dish was created in Rajasthan because fresh vegetables were not always easily available in the desert region. As a result, people used gram flour to prepare dumplings that could be cooked into a rich and tasty curry. The combination of spices, yogurt, and soft gatte gives the dish a unique and delicious flavor. Gatte Ki Sabzi is usually served with roti, chapati, or rice and is a common dish in many Rajasthani households. It is loved for its traditional taste and is often prepared during special meals or family gatherings. 🍛✨  For Gatte (dumplings)         1 cup besan (gram flour) 2 tbsp yogurt 1 tsp red chili powder ½ tsp turmeric ½ tsp carom seeds (ajwain) Salt to taste 1 tbsp oil Water (for kneading) For Gravy 1 cup yogurt 1 onion (finely chopped) 1 tomato (chopped) 1 tsp cumin seeds 1 tsp coriander powder ½ tsp turmeric 1 tsp red chili powder 2 tbsp oil or ghee Salt to taste 👩‍🍳 Instructions Prepare the Gatte: Mix besan, yogurt, spices, salt, and oil. Add a little water and knead into a firm dough. Shape and Boil: Roll the dough into long cylindrical shapes and boil them in water for about 8–10 minutes. Remove and cut into small pieces. Make the Gravy: Heat oil in a pan, add cumin seeds, then sauté onion and tomato until soft. Add Spices: Add turmeric, red chili powder, and coriander powder. Mix well. Add Yogurt and Gatte: Add whisked yogurt and the gatte pieces. Cook for 5–7 minutes until the gravy thickens. 🍽️ Serving Serve hot Gatte Ki Sabzi with roti, paratha, or steamed rice. ✨ Tip: Add a spoon of ghee on top for extra authentic Rajasthani flavor.
